Yogurt is the most impeccable product ever invented by mankind. It is also a healthy alternative to mayonnaise-based sauces. We offer three easy and delicious salad dressing recipes that will please your tastes.

Note: The taste of the sauce will depend on what yogurt you choose. We recommend using thick natural yogurt prepared using the thermostatic method.

1. Yogurt dressing with mustard

● 250 ml natural yogurt
● 1 teaspoon Dijon mustard (you can also use regular mustard)
● 1 teaspoon apple cider vinegar
● ½ teaspoon dried dill and parsley
Mix mustard and yogurt, add apple cider vinegar and herbs, blend it all. Let the sauce sit in the refrigerator for at least 2 hours.


2. Yogurt-based sauce for Caesar salad

● 100 gr. natural (or Greek) yogurt
● 2 anchovy fillets
● 1 clove of garlic
● 2 tbsp. spoons of lemon juice
● 2 tablespoons olive oil
● 1 tablespoon of grated hard cheese (ideally Parmesan)

Beat the yogurt, anchovies, chopped garlic and lemon juice with a blender, add salt and pepper, grated cheese and beat again. The sauce is ready!

3. Creamy yogurt sauce with herbs

Nowadays, mayonnaise has become such a popular product that it is difficult to imagine the process of preparing many familiar dishes without it. They usually season salads, grease sandwiches, and are also used for baking meat, fish or vegetables. What if you suddenly don’t have this famous sauce on hand? What can you replace mayonnaise with? Experienced chefs can recommend many interesting options. It all depends on what kind of dish you need to prepare. There are several original recipes that will definitely appeal to lovers of culinary experiments.

Curd mayonnaise

Initially, mayonnaise is a product with a high content of fats and carbohydrates. Therefore, its benefits for the human body can be questioned. How to replace mayonnaise so as not to harm yourself? Proponents of protein nutrition can be offered an unusual option. This is mayonnaise made from cottage cheese. It's not difficult to make. To do this you will need a minimum set of the simplest products:

  • 4 grams of table mustard;
  • 100 grams of cottage cheese (it is better to take soft);
  • salt;
  • 1 yolk;
  • ground pepper;
  • 5 grams of lemon juice.

This sauce is very easy to make:

  1. All ingredients must be collected in one container.
  2. Mix them thoroughly using ordinary cutlery (spoon, fork) or special kitchen equipment (mixer, blender).

The prepared mixture should be placed in the refrigerator for some time. The mass should acquire the desired consistency. In addition, the original ingredients need to exchange their aromas. This unusual protein mayonnaise will be an excellent addition to various dishes.

Seed sauce

Very often, sauces are used as an addition to various snacks. How to replace mayonnaise for someone who is used to dipping cut meats or vegetables into it? For such purposes, an option based on sunflower seeds is ideal. It will not be difficult to make such mayonnaise at home. All you need is:

  • fresh seeds;
  • a little honey;
  • salt;
  • mustard seeds.

The number of ingredients is taken arbitrarily. It all depends on the personal taste of the hostess. This mayonnaise is prepared in several stages:

  1. First you need to soak the seeds. To do this, they should be filled with water and left for about 15 hours. If desired, you can even germinate them. In this case, the amount of vitamins in the sauce will increase significantly.
  2. After this, they should be rinsed well.
  3. Grind the seeds along with the rest of the ingredients in a blender.
  4. Add a little water to the resulting mass and beat it thoroughly.

Salsa verde

  • 150 grams of any vegetable oil;
  • 3 anchovies;
  • one and a half glasses of parsley;
  • 2 cloves of garlic;
  • one tablespoon each of lemon juice and wine vinegar;
  • salt;
  • a quarter glass of capers;
  • freshly ground black pepper;
  • ½ teaspoon lemon zest.

The method for preparing this sauce is similar to the previous version:

  1. Place all ingredients except pepper and salt in a blender.
  2. Beat until the mixture becomes almost homogeneous. This will only take a few minutes.

The amount of salt and pepper is adjusted to taste. These components must be added to the ready-made mixture. The result is a wonderful sauce that will harmonize perfectly with any meat, fish or fresh vegetables. Women should really like this supplement. After all, the basis of this sauce is parsley, rich in iron, vitamin C, beta-carotene and folic acid. And all these elements are known to actively help the body fight aging.

Salad mayonnaise

Recently, mayonnaise is increasingly used to prepare all kinds of salads. This popular thick sauce makes a wonderful addition to a variety of foods. But its high calorie content sometimes makes you think about possible alternative options. So what can you replace mayonnaise in a salad with? It turns out there are a lot of pretty interesting mixtures out there. For example, almond-based sauce deserves special attention. Here for 1 glass of water you need to take:

  • 200 grams of almonds;
  • 4 tablespoons lemon juice;
  • 10 grams of salt;
  • a piece of ginger root (1.5-2 centimeters);
  • 15-20 grams of honey;
  • ½ teaspoon grated nutmeg.

To prepare such a mass it will take time:

  1. First, the nuts need to be soaked in cold water for 8 hours.
  2. Remove the skin from them. This will not be difficult to do with softened fruits.
  3. Peel the ginger and finely chop.
  4. Place all the ingredients according to the recipe in a blender, add water and beat well. Here we must remember that the mass should not be very thick. After all, this is a sauce, not some kind of cream.

Fans of strong flavors can add a little mustard. This original sauce is an excellent answer to the question of how to replace mayonnaise in a salad. True, its use is partially limited. For example, such a mass should not be added to the dough.

Green sauce

What other salad dressing is there instead of mayonnaise? In the case of vegetable mixtures, a green sauce created by Spanish chefs is ideal. It requires only three ingredients:

  • olive oil;
  • garlic;
  • fresh herbs.

The quantity of each ingredient is chosen arbitrarily. There are no strict restrictions here. This sauce is very easy to make:

  1. Greens (usually dill and parsley) must be thoroughly washed.
  2. Peel the garlic.
  3. Place the prepared products into a blender and grind well.
  4. Add oil and repeat mixing.

It makes an amazing salad dressing instead of mayonnaise. All that remains is to pour the finished mixture over the chopped vegetables. If there is too much sauce, don't be upset. Curd-kefir sauce

Almost every Russian family always has “Herring under a Fur Coat” on the New Year’s table. This salad has already become a real holiday attribute. But even on such days you need to think about your health. After all, the calorie content of mayonnaise, which is usually used to prepare such a salad, is quite high. What to do in such a situation? How to replace mayonnaise in “Herring under a fur coat”? Experts advise using an unusual mixture, for the preparation of which you will need:

  • 200 grams of cottage cheese;
  • salt;
  • 300-400 milliliters of kefir (or milk);
  • sugar;
  • 2 teaspoons table mustard.

Sauce preparation technology:

  1. Place cottage cheese in a deep container.
  2. Add mustard, a glass of kefir to it and beat thoroughly using a blender or mixer. When using milk, it will take more time for the mass to become almost homogeneous.
  3. Add salt and a little sugar to taste.
  4. If desired, you can add a pinch of cumin to the mixture for flavor.
  5. Pour in the remaining kefir to achieve the desired consistency.

Creamy sauce for Olivier

There is another salad that Russians have long liked. Today, as a rule, not a single holiday is complete without the famous “Olivier”. What sauce should I use instead of mayonnaise in this case? There are several options here too. For the simplest of them you will need:

  • 5 grams of fine salt;
  • 1 cup heavy cream (at least 22 percent);
  • 5 green onions.

There are some subtleties in preparing this sauce:

  1. First, you need to add salt to the juice and wait until it is completely dissolved.
  2. While stirring with a mixer, gradually add cream. Don't rush and work at high speeds. The cream may curdle and the sauce will not work.
  3. Finely chop the onion with a knife.
  4. Add it to the finished homogeneous mass and mix again. In this case, the mixer will no longer be needed. A regular tablespoon will be enough.

Now this sauce can be used to season not only Olivier salad, but also other salads for the holiday table.

Sour cream sauce

People who don't eat eggs sometimes have a hard time. After all, they cannot eat everything prepared with mayonnaise. But even from this situation there is a way out. In some cases, sour cream is better instead of mayonnaise. Or you can make an original sauce based on it. Products you will need:

  • 50 grams of olive oil;
  • 175 grams of sour cream;
  • salt;
  • 25 grams of sugar;
  • a pinch of allspice;
  • 15 grams of vinegar;
  • teaspoon French mustard.

The sour cream sauce is prepared very quickly:

  1. First of all, vinegar must be mixed with sugar, butter and mustard. At this stage you can use a mixer.
  2. Salt and add a little pepper to taste.
  3. Add sour cream and mix well again. Here you won't need a mixer. It must be remembered that with intensive stirring the sour cream gradually becomes liquid. And this is bad for such a sauce.

The finished mixture can be immediately used to dress your favorite salads. You should not store it for a long time to avoid the mixture from separating.

Avocado sauce

Some people are forced by circumstances to change their diet. For example, what should vegetarians use instead of mayonnaise? After all, they also love to make all kinds of salads or prepare sandwiches in the morning. A delicate and very light avocado-based sauce is suitable for them. You will need the following ingredients:

  • 1 avocado;
  • 35 grams of olive oil;
  • 2 tablespoons lemon juice;
  • salt;
  • a couple of teaspoons of hot mustard.

The technology for preparing such a sauce is not particularly complicated:

  1. To begin, cut the avocado in half with a knife and remove the pit.
  2. Using a gentle teaspoon, scoop out the pulp and place it in a bowl.
  3. Add lemon juice, some mustard, oil and mix well.
  4. Add salt.
  5. Add the rest of the mustard. This must be done very carefully so as not to spoil the desired taste.

This sauce is good to spread on still warm toast. And if desired, it can be used to season any vegetable salads perfectly.

Bechamel

As you know, mayonnaise is used not only for making salads. This sauce is often poured over meat or fish before baking. But sometimes you have to look for other options. Moreover, there are a lot of them. For example, what can you replace mayonnaise in French-style meat? Any specialist will confirm that the best alternative is bechamel sauce. It will require a special set of components:

  • 100 grams of butter;
  • 60 grams of wheat flour;
  • 0.5 liters of milk;
  • 1 teaspoon grated nutmeg;
  • salt.

This sauce must be prepared in a certain sequence:

  1. First, you need to melt the butter in a saucepan. The fire should be small.
  2. Add flour and, stirring constantly, fry it a little.
  3. Add the remaining ingredients according to the recipe.
  4. Whisk everything well so that there are no lumps.

This mixture will be a good addition to fresh, juicy meat. After baking under a cheese crust, it will become even more tender and aromatic.

Yogurt based sauce

To prepare vegetable salads, it is best to use low-calorie dressings instead of fatty sauces. For such products, for example, yogurt-based mixtures are ideal. But here another question arises. It is not clear what kind of yogurt to replace mayonnaise with. It is better, of course, to take a sugar-free, low-fat product. With it you will get an original and very tasty sauce. For work you will need:

  • 250 grams of “Optimal” yogurt (2%, without sugar);
  • a teaspoon of table mustard;
  • zest of one orange;
  • 25-35 grams of honey;
  • 2 tablespoons lemon juice.

Preparing the sauce:

  1. First, mix the yogurt well with mustard.
  2. Add honey (you need to melt it first) and the rest of the ingredients. It is not necessary to use special equipment for mixing.

The finished sauce must be cooled well. The mass should brew properly. After this, it can be used to season fruit, vegetable and even mushroom salads.

Salads with mayonnaise are the main dishes of the New Year's table. No self-respecting housewife can do without them. But mayonnaise... is perhaps the most harmful product of the holiday.   • 600 ml vegetable oil
  • 25 g mustard
  • 3 yolks
  • 10 g salt
  • 20 ml lemon juice
  • 1 g saffron

Step 1. Place the yolks and mustard in a blender and mix at low speed.

Step 2. Pour cooled vegetable oil in a thin stream.

Step 3. Add salt, lemon juice and saffron (soaked in vegetable broth) to the resulting mass.

Step 4. Mix everything and put it in the refrigerator for 6 hours so that the saffron gives an even color.

  • 15 g Dijon mustard
  • 350 g vegetable oil
  • 5 g soy sauce
  • 100 ml olive oil
  • 50 ml water

For herring under a fur coat and multi-layer salads

Ingredients:

  • 2 boiled yolks
  • 200 g sour cream 20% fat
  • 1 tbsp. l. mustard
  • salt, pepper to taste

Preparation:

  1. Grind the yolks with sour cream, add mustard and salt. The sour cream should be thick so that the salad does not fall apart.
  2. You can use Dijon mustard instead of regular mustard, it will turn out unusual and very tasty.

Curd dressing with yogurt

Ingredients:

  • 100 g yogurt without additives
  • 100 g granular cottage cheese
  • 1 tsp. mustard
  • 1 boiled yolk
  • 1 tsp. lemon juice
  • salt, pepper to taste

Preparation:

  1. Mix cottage cheese and yolk with yogurt in a blender or rub them through a sieve.
  2. Add the rest of the ingredients and stir.

Horseradish sauce for meat

Ingredients:

  • 200 g sour cream
  • 2 tbsp. l. grated horseradish
  • 1 tsp. mustard
  • 0.5 tsp. garlic powder
  • salt, pepper to taste

Preparation:

  1. Mix all the ingredients and the sauce is ready.
  2. Horseradish can be used fresh or ready-made with beets.

Orange dressing

Ingredients:

  • 250 g yogurt
  • 2 tsp. honey
  • 1 tbsp. l. orange juice
  • 1 tsp. mustard
  • 0.5 tsp. orange zest
  • salt, pepper to taste

Preparation:

  1. Mix all ingredients using a blender.
  2. It is better to take liquid honey or melt regular honey in a water bath.

Tomato curd sauce

Ingredients:

  • 100 g soft cottage cheese
  • 100 ml plain yogurt
  • 1 tbsp. l. tomato paste
  • salt, pepper to taste

Preparation:

  1. Use a blender to mix all ingredients well.
  2. This sauce is ideal for pizza and hot sandwiches.

Mint dressing with cucumber

Ingredients:

  • 250 ml yogurt
  • 0.5 medium cucumber
  • 1 sprig of mint
  • 1 tsp. vegetable oil
  • 0.5 tsp. lemon juice
  • salt, pepper to taste

Preparation:

  1. Grate the cucumber on the finest grater or chop in a blender.
  2. Mix with the rest of the ingredients and add finely chopped mint.

French dressing

Ingredients:

  • 250 g sour cream
  • 1 tbsp. l. Dijon mustard
  • 0.5 tsp. lemon juice
  • 1 tsp. honey
  • salt to taste

Preparation:

Mix all the ingredients and the sauce is ready!

Tartarus

Ingredients:

  • 2 boiled yolks
  • juice from half a lemon
  • 120 ml olive oil
  • 1 pickled cucumber
  • 5 olives
  • 1 bunch of green onions
  • 2 cloves garlic

Preparation:

  1. Mash the yolks with a fork and add lemon juice. Using a blender, mix the mixture, gradually adding olive oil.
  2. When the sauce thickens, add finely chopped onion, olives, cucumber and garlic.

Avocado dressing

Ingredients:

  • 1 avocado
  • 300 ml kefir
  • 3 tbsp. l. olive oil
  • 2 tbsp. l. lemon juice
  • 0.5 tsp. honey
  • salt, pepper to taste

Preparation:

  1. Peel the avocado, remove the pit and blend with a blender until pureed.
  2. Add the rest of the ingredients and mix well.

diet sauce

Ingredients:

  • 3 tbsp. l. linseed oil
  • 7 tbsp. l. sour cream
  • 1 tsp. mustard
  • 1 tbsp. l. lemon juice or apple cider vinegar
  • salt, pepper to taste

Preparation:

Mix all ingredients except sour cream in a blender, add it last.

Pesto

Ingredients:

  • 50 g basil
  • 2 cloves garlic
  • 50 g parmesan or other hard cheese
  • 3 tbsp. l. nuts (pine, cashew, walnuts)
  • 100 ml olive oil
  • salt to taste

Preparation:

  1. This recipe requires a food processor or blender. But first, chop the basil, garlic, nuts and grate the cheese on a fine grater.
  2. Then grind all the ingredients in a blender.
  3. Mayonnaise is not the best choice for salad dressing. Even homemade, made from natural ingredients, it is twice as caloric as sour cream. If you use mayonnaise very often, you can gain excess weight.
  4. If you don’t have time to prepare the sauce, make the simplest dressings - sour cream or cream with mustard, vegetable oil (olive, sesame, flaxseed) with lemon juice. They will be several times healthier and tastier than fatty mayonnaise.

So much has been said. It is fatty, too high in calories, has too much salt... There are countless complaints about the most popular sauce. But nevertheless, we buy it and cannot refuse it.

Often we just need a thick and spicy sauce for traditional salads: Olivier salad, herring under a fur coat.

But mayonnaise can be replaced with lighter sauces that will add a fresh twist to familiar dishes. These simple and tasty dressings for salads, meat and fish dishes are very easy to prepare, they consist of simple and affordable ingredients, so you can safely use them.

For those who are preparing their figure for the New Year, I want to offer several sauces that you can prepare yourself. These sauces are a great alternative to mayonnaise, which is known to have a bad effect on our waistline.

Sour cream-sesame sauce

  • 1 tbsp. spoon of ground sesame
  • 2-3 tbsp. spoons of clean water
  • juice of half a lemon
  • asafoetida (if available)
  • well chopped dill and parsley
Preparation:

Mix ground sesame seeds, water, lemon juice until it reaches the consistency of pancake batter; if it is too thick, add more water. Add asafoetida, well-chopped dill and parsley.

The sauce prepared in this way can be used to season any salads instead of sour cream, vegetable oil and mayonnaise.

Sour cream sauce

  • 3 tbsp olive oil
  • 1 tbsp lemon juice or apple cider vinegar
  • 1 teaspoon mustard
  • 7 tablespoons sour cream
  • salt and pepper - to taste
Preparation:

Mix butter, lemon juice, mustard, salt and pepper until smooth. Add sour cream and mix.

Suitable for all salads that require mayonnaise. Can be spread on sandwiches.

Mayonnaise sauce "Linen"

Typically, homemade mayonnaise is made using eggs and mustard, but some of our friends avoid eating eggs, so we found a vegan mayonnaise recipe based on flaxseed flour.

  • 2 tbsp. l. flaxseed flour
  • 60 ml. Water
  • 125 ml. vegetable oil
  • 1-2 tsp. mustard
  • 2 tbsp. lemon juice
  • salt and sugar to taste
Cooking process:

1. Add water to flaxseed flour and heat. Stir constantly until it thickens.

  1. Let cool until it reaches room temperature or close to it.
  2. Add a little sugar and salt, and beat in a blender, gradually pouring in vegetable oil. Try not to add more than a tablespoon of oil at a time.
  1. When the mixture acquires the texture of mayonnaise, add lemon juice, mustard, salt and sugar to taste.
  2. Flaxseed mayonnaise is ready. It is a little darker in color than store bought, but much tastier.

Use it in various dishes, just like any other mayonnaise!

Garlic-yogurt sauce

  • 1 cup unsweetened yogurt
  • ½ head of garlic
  • 5 tbsp. olive oil
Preparation:

Peel the garlic and pass through a press. Blend with yogurt in a blender. Then add oil and beat again. Salt to taste.

Curd sauce

  • 1 glass of milk
  • 100 g cottage cheese
  • 2 tbsp. spoons of mustard
Preparation:

Grind milk with cottage cheese, add mustard and beat everything. Add cumin crushed in a mortar, salt and pepper.

Sour cream and soy sauce

  • 1 cup sour cream
  • 1 tbsp. soy sauce
  • 3 teeth Garlic
  • A few drops of balsamic vinegar
  • Dill
Preparation:

Pass the garlic through a press and chop the greens very finely. Place all ingredients in a blender and blend until smooth.

Sour cream-lime sauce with herbs

  • 1 bunch of parsley
  • 1 cup sour cream
  • ½ cup olive oil
  • ¼ lime
  • A little mustard
  • Salt and pepper
  • Mix oil, lemon juice, mustard
Preparation:

Grind the parsley in a blender, add sour cream, juice from a quarter of a lime, mustard, salt and pepper. Beat everything until smooth. Add the oil in a thin stream, whisking the sauce until it thickens.

Sour cream and mustard sauce

  • 3 tbsp. l. sour cream
  • 1 tsp. mustard
  • 1 bunch of basil greens
Preparation:

Chop the basil greens, mix mustard and sour cream. Add basil to the mixture and blend with a blender.

Chilli dip for vegetables or poultry (chicken, turkey)

  • 1 cup (200 g) yogurt
  • 2 tbsp. spoons of chilli sauce
  • 1 teaspoon lemon juice
  • a little salt
Preparation:

The base of the sauce (low-fat yogurt, kefir, or sour cream) is mixed with all the other ingredients according to the recipe and allowed to brew for a couple of hours in the refrigerator for the aroma and flavor to develop.

Sauce “Green dip for vegetables, fish, poultry”

  • 1 cup (200 g) yogurt
  • 100 ml green peas (drain off liquid)
  • 100 g fresh cucumber
  • salt, black pepper to taste
Preparation:

Grind the peas, onion and cucumber in a mixer or food processor, add to the yogurt, add salt and pepper, and let it brew.

Spanish sauce for grilled meat or vegetables

  • 1 cup (200 g) yogurt
  • 1 tomato
  • 8-10 black or green olives
  • 1 clove of garlic
  • 1-2 tbsp finely chopped green onions
  • salt, black pepper to taste
Preparation:

Chop all the vegetables with a knife and add to the yogurt.

Curry sauce for poultry and vegetables

  • 1 cup (200 g) yogurt
  • 1 apple
  • 1 teaspoon curry powder
Preparation:

Cut the apple as finely as possible (in cubes) and immediately mix with yogurt and curry powder.

Sauce “For fish”

  • 100 g low-fat sour cream, or, if available, soft yoghurt cheese (if you can’t buy it, it is obtained by straining the yoghurt through a cloth for a long time)
  • 1 tbsp prepared horseradish
  • salt to taste
Preparation:

Mix everything. This is one of the best sauces for boiled fish and fish cakes.
