1. Hot water freezes faster than cold water.

If you place two identical flasks in the freezer, one with hot water and the other with cold water, then a flask with hot water will freeze faster than one with cold water. Although this seems to contradict common sense. This fact was first experimentally established by high school student Erasto B. Mpemba in 1963. Therefore, this phenomenon is called the “Mpemba effect”. Scientists still cannot figure out the cause of this phenomenon.

2. "Super cooling" prevents ice from forming.

Water is known to turn into ice when cooled to a temperature below 0 degrees Celsius. But ordinary water has the amazing property of “supercooling”! This phenomenon leads to the fact that water, even cooled to a temperature below 0 degrees, can remain liquid. This is observed in cases where environment does not contain centers or nuclei of crystallization that could trigger the formation of ice crystals. When the crystallization process starts, you can observe how the “super-cooled” water instantly turns into ice.

3. Water can be “glassy”

What states can water be in? Solid, liquid and gaseous? But no. Scientists identify at least five states of “liquid” water and as many as fourteen states of ice. Remember the point about super-cooled water? So, no matter what you do, at -38 °C, the most super-cooled water will suddenly turn into ice. And at -120 °C, ice becomes viscous, like molasses; at -135 °C and below, it turns into “glassy” or “vitreous” water - a solid substance with no crystals.

4. Memory of water.

It is believed that water is capable of “remembering” the properties of liquids dissolved in it, even if the dilution factor is so high that nothing remains in the solution except water molecules. An international group of scientists led by Professor Madeline Ennis from Queen's University Belfast tried to confirm this fact in 2002. Based on the results of the research, it was stated that the “water memory” effect really exists. However, experiments carried out later under the supervision of independent experts did not yield results. Nevertheless, this phenomenon is still being studied.

5. Quantum number of water

It turns out that at the molecular level, at the level of attoseconds (the time during which light travels a distance comparable to the size of a water molecule), an extraordinary quantum effect occurs with water and the chemical formula of water turns from ordinary H2O into H15O! This phenomenon was established in 1995 as a result of an experiment.
