Omelette with egg recipe. How to cook an egg omelet: simple and tasty recipes with photos. Turn over easily and correctly

Who took root on Russian soil and became completely family. This is, for example, an omelette in a frying pan: tender, fluffy, dietary (if without additives) and satisfying (if, in addition to eggs and milk, there are vegetables, herbs, cheese, mushrooms, meat or bacon in the frying pan). That is, without exaggeration we can say that an omelet is the perfect breakfast that is suitable for everyone!

It’s not difficult to cook an omelette in a frying pan; the main thing is to know a few rules, but here’s what’s interesting: in this matter, as many cooks as there are, so many opinions. Some are sure that eggs for an omelet should never be beaten, at most scrambled with a fork or whisk, while others advocate using a mixer; For some, just two ingredients and a pinch of spices are enough for a lush omelette, while others are unable to prepare a lush delicacy without adding flour, semolina, starch, soda or even dry yeast. For some, it is important that the omelette looks like a soufflé, but the same French believe that an omelette in a frying pan should not be too fluffy and tall. Which once again confirms the old truth about differences in tastes and preferences.

But still, there are some undeniable general points in preparing an omelet:

  • Eggs for omelettes must be fresh. It is in fresh eggs that the white holds its shape well, and your omelette in the pan will never fall off;
  • The right frying pan is another correct omelette. Whether it’s a cast-iron frying pan inherited from my grandmother, or a modern frying pan with a non-stick coating, it doesn’t matter, the main thing is that its bottom is thick and even;
  • It is best to fry an omelet in a frying pan using butter or ghee. It tastes better this way;
  • The amount of liquid for a perfect omelet is calculated as follows: for one egg - 1 tablespoon of liquid;
  • Milk, cream, sour cream, fermented baked milk, kefir, mayonnaise, mineral water, broth... The taste and consistency will be different each time;
  • As soon as the prepared mixture is poured into the frying pan, the heat should be high, but as soon as the omelette begins to rise, the heat should be reduced. The omelette is prepared in a frying pan under a lid, one might say, simmering until done.

As is often the case, one dish produces many variations. Likewise, an omelette in a frying pan can be a “simple” omelette, either for a kindergarten, or a complex dish like an Italian frittata, Spanish tortilla or Japanese omuresta. It's all in the filling!

There is another way to prepare this dish. Find out,

Omelette is loved, if not by everyone, then by many. It's easy, affordable and tasty dish can be served for breakfast, lunch, dinner and even for festive table. But do we know how to cook it correctly? Each housewife has her own secrets for preparing an omelet with milk in a frying pan, and we will share with you some recipes and nuances of creating this dish.

What is important to know

A pan-cooked omelette can consist of a variety of ingredients, depending on the tastes and preferences of your family and guests. But the main products you will need are:

  • milk;
  • eggs;
  • salt;
  • spices;
  • oil for frying.

The choice of milk and eggs should be treated with special attention. Products must be fresh. If you want to cook an omelet with curdled milk, make sure that it is not weathered or covered with a thick film - it is better not to use such sour milk for food.

Omelet is a very simple and satisfying dish that can be prepared both on weekdays and on holidays.

Before cooking, remove the eggs from the refrigerator for 10–15 minutes to warm them until room temperature. Be sure to wash them to protect your dish from salmonella (this especially applies to home-cooked eggs).

Note! Eggs can cause considerable harm to your health if you consume them large quantities. Excess protein leads to increased cholesterol levels and kidney problems. Remember that the consumption rate for an adult is 3 eggs per day.

Oil for frying can be either butter or vegetable. If you care about your figure and the calorie content of an omelet is important to you, use sunflower or olive oil. You can even use lard, but the omelette in this case will be a little “heavy” for the stomach.

As a frying pan, it is best to choose a cast iron frying pan with a thick bottom. Non-stick pans work well. The main condition is that the dishes must be clean and dry.

The biggest problem housewives face when preparing an omelet is the difficulty of turning it over. There is a simple way of double-sided frying:

  1. After the omelette is well cooked on one side, take a flat, wide lid and cover the frying pan with it. Turn the dish over so that the egg mixture remains on the lid.
  2. Return the pan to the heat. Remove the omelet from the lid, raw side down. It is better to use a ceramic or glass lid.
  3. Add a little grated cheese to the milk-egg mixture. Thanks to it, the mixture will become denser and will not fall apart when turned over.

How to cook an omelette in a frying pan with milk

  1. It is advisable to remove all foods from the refrigerator at least 15 minutes before cooking so that they warm up to room temperature. I poured the milk into a deep bowl and beat in the eggs. There should be approximately the same volume of milk as the egg mass. 3 eggs are enough for one serving. If you want to cook a tall and very fluffy omelette, take a double portion. And be sure to use fresh eggs, then they will beat perfectly even without extra effort.

  2. I immediately put the frying pan on the stove to heat up - since whipping will take a matter of minutes, you should already have a hot frying pan on hand. In a bowl with milk and eggs, I added salt and pepper to taste. If you want, you can use your favorite spices, but not too much so that they do not drown out the taste of the omelette.

  3. Armed with a whisk, I beat the eggs with milk - without too much persistence, for about a minute, until foam appeared on the surface. You can use a fork instead of a whisk. But it’s better to refuse a blender or mixer, otherwise your omelette will quickly rise, but will also fall almost immediately. If you add the filling, do it carefully and only when the omelette mixture is already whipped, that is, at the very end.

  4. Meanwhile, the frying pan has already warmed up. By the way, cast iron cookware is ideal; it heats up well and maintains the same temperature over the entire surface, which means the omelette will cook evenly and will not burn. I poured a couple of tablespoons of vegetable oil into it. The main thing here is to take a refined product that will not burn or smoke in the pan. If you wish, you can add a piece of butter and cook with the mixture, then the taste will be even more delicate.

  5. I carefully poured the milk and egg mixture into the pan. I immediately covered it with a lid and continued to fry over medium heat for exactly 20 seconds - you can time it or slowly count to twenty. During this time, the frying pan will give up its heat to the omelette mixture and it will seize from below.

  6. After 20 seconds, reduced the heat to low and continued frying with the lid on. Cooking time is on average 2-3 minutes. Be guided by the surface of the omelette; it should thicken on top, but not be completely cooked.

  7. Now you need to turn the omelette over to the other side. You can do this in one motion or divide it with a spatula into 4 parts and turn each one over separately. I find it more convenient to use the second method. After flipping, I covered the pan again with a lid and cooked for about 2 more minutes, until full readiness. Do you see how ruddy it turned out underneath? And inside it’s as soft as a cloud.

Serve immediately, or directly in the pan while the omelette is still hot. You can supplement the dish with vegetables, pickles, herbs and toast. Have a delicious breakfast and bon appetit!
